I'd use a medium heat and keep an eye on it so it's not overcooked. Then, take the meat out and let it cool. Then put it in the fridge. If you're lucky, the breast will still be hot when you eat it, but if you're not, it'll be nice and cold.

I've cooked chicken breasts that were about an inch thick. I think that's what you're looking for. They're the "lighter" meat, and the tenderest.

Of course, there's nothing wrong with regular chicken breast, too.
